Synthesis, the oven by definition
Synthesis is a revolutionary modular tunnel oven. All you have to do is set the temperature and speed of the conveyor mesh, prepare your recipe and put it in the oven.
There is no need to check during cooking, because the oven will remove the product from the heat, preventing it from burning.
Available in electric or gas versions, Synthesis can cook everything from pizza to grilled vegetables, deli bakes or pastries.
All Synthesis modular tunnel ovens can be stacked in order to step up the production rate during peak hours. Stacking two modules also enables multiple cooking processes by optimizing the space in the kitchen.
The maximum temperature is 320°C. The hot air hits the product as it passes through the chamber, ensuring perfect cooking from the first to the last pizza.
A combination of essential elements gathered in an ideal solution is called Synthesis. This is an ideal oven, combining fundamental qualities, such as a mesh conveyor belt, an air ventilated tunnel and a highly versatile range of modules.
Since 1952, Zanolli has produced a wide range of ovens for bakeries, pastry shops and pizzerias. In 1987, we patented the first Italian ventilated tunnel oven: Synthesis. Rapidly reaching the global market, today Synthesis is the No 1 tunnel oven in Europe in terms of sales and product range.
Citizen PW
The Citizen PW electric oven is ideal for pizza but can do much more. The steam drain valve supplied as standard also enables you to cook other recipes.
According to your specialities, you can cook traditional round pizza, peel or tray-baked, in addition to all your deli bake classics.
You can choose the single or double chamber version and build a pizza oven suited to your production needs, with the option of stacking up to 3 modules.
Simpler than the electromechanical model, Citizen is completed with the digital version. In addition to the independent adjustment of floor and roof temperatures, you can programme the cooking chamber to switch on on any day of the week and decide which cooking cycle activate of a total of 9 that can be stored.
You can opt for cooking chambers fully lined with refractory material and equip your Citizen oven with the enhanced heating element kit for extreme performance.
